Did you know that January is National Soup Month? That’s pretty perfect timing, because there is nothing I like better on a freezing cold winter evening than a bowl of hot soup for dinner.

Sometimes I have days where it seems no matter how hard I try, I can’t shake the feeling of being cold. Days like that are soup days for sure! Not only is soup delicious, but I love how it literally warms you up from the inside.

I love this recipe for Easy Cheesy Broccoli, Kale, Carrot Soup. Broccoli Cheese Soups are one of my favorites. I love the thick, cheesy, creamy base for the vegetables.

In this version, I’ve added some extra vegetables – in the form of carrots and kale – for a pop of color, texture, and nutrition. I also added a generous helping of one of my new favorite ingredients, Nutritional Yeast.

If you’ve never heard of that before, head over to my post about nutritional yeast to read why it is so good for you. Aside from the nutrition, it adds an extra level of cheesy flavor and creaminess to soups.

Thanks to Bear Creek – the leading brand of hearty dry soup mixes for over 20 years – you can get a bowl of this Easy Cheesy Broccoli, Kale, Carrot Soup in just about 20 minutes.
