I mentioned last week when I talked about Snacks for Mom that I had lost a lot of weight a couple years back and that I had worked really hard to get back to a healthy weight. When I went through my divorce (yes, I’m a single mom now), that is how my body decided to respond to the stress of such a big life change.
Pounds and pounds just fell off in the matter of months before I could even realize what was happening. Once I realized and got to a point where I knew I needed to do something about it, I started supplementing with healthy smoothies like this Pineapple Coconut Kale Smoothie. I was not going to gain back the lost weight by shoving pints of ice cream and bags of potato chips in my mouth.
So, a couple of times a day I would drink big huge smoothie full of nutrients and healthy fats in addition to my meals. It is one of Madeline and my favorite things to eat for breakfast. I love it because she’s getting all those great nutrients in her body. Total Time: 5 minutes
2 tablespoons coconut oil
1 tablespoon chia seeds
1 1/2 ounces frozen kale, or fresh
8 ounces water, cold
10 ounces frozen pineapple
2 ounces orange juice
1 scoop vanilla protein powder, optional
Add the coconut oil, chia seeds, kale and water to the blender. Puree (using the whole juice cycle if available) until completely smooth. Add the pineapple, orange juice and vanilla protein. Puree until well blended. Drink immediately.
