How to Make Mixed Berry Galette (Delicious Summer Dessert!)
This beautiful Mixed Berry Galette is perfect for summer entertaining. Raspberries, blueberries, and blackberries are combined with lemon sugar, then baked in a homemade almond crust. Enjoy this berry galette for dessert with whipped cream or a scoop of ice cream for a tasty summer dessert.

Creating this Berry Galette
Spring and Summer have always been home to my most favorite fruits: berries!
Raspberries are my favorite, but I’ll take blueberries or blackberries any day. I love them for breakfast, snacks, desserts, even in salads at dinner.
After getting settled in our new house the first thing I wanted to do was make dessert. I haven’t made dessert in months!
The last time I had a piece of something sweet to eat after dinner was when my friend Tracy had us over for dinner in New Mexico and served Strawberry Rhubarb Pie for dessert the night before we moved.
That is just too long in between sweet after dinner treats if you ask me!
Berry Galette to Welcome Summer
Summer is definitely in full swing in Colorado.
We’ve had several days of high 90’s and a few days at 100+ degrees already. I have been assured that this is not normal, but it has made for several nice afternoons at the pool.
I’m glad we welcomed summer here with this tasty Mixed Berry Lemon Galette! Free-form pies like these are so simple because there is no crimping or perfection intended.
Rustic is best and I think the ground almonds and portion of whole wheat flour add to the rustic nature of this crust.
It would also be very pretty for a 4th of July dessert table with the bright red raspberries and blueberries. I love the combination of blueberries, raspberries, and blackberries with a hint of lemon, and I hope you do, too!
What Is a Galette?
A galette is a French term for a dessert thatβs essentially a free-form pie.
Galettes can be made with a variety of fresh fruit from different types of berries to apples to stone fruit. However, some even have savory fillings.
These French free-form pies are supposed have a rustic look, which makes them a relatively easy recipe if youβre not very experienced with making pies. They’re much more forgiving than a structured pie.
Berry Galette Ingredients
You’ll love that this delicious mixed berry galette recipe starts with some pretty simple ingredients. Hereβs what youβll need to make this free form pie:
For the Pie Crust:
- Unsalted Almonds
- All Purpose Flour
- White Whole Wheat Flour
- Salt
- Ground Cinnamon
- Whole Cane Sugar
- Butter
- Ice Cold Water
For the Berry Filling:
- Cornstarch
- Lemon Juice
- Lemon Zest
- Sugar
- Blueberries
- Raspberries
- Blackberries
For the Egg Wash:
- Egg
- Water
- Turbinado Sugar

How to Make this Recipe for Mixed Berry Galette
This berry galette recipe has 4 parts: 1.) preparing the dough, 2.) making the berry filling, 3.) assembly, and 4.) baking. Here’s an overview of each step.
Making the Berry Galette Filling
Combine the sugar, cornstarch, and lemon juice and zest for the filling in the bowl of a food processor. Then, process until the mixture smells of fragrant lemons.
After that, add the sugar mixture and fresh berries to a medium bowl and combine. Mix well to ensure that the mixed berries are completely coated in the sugar mixture.
I recommend using a silicone spatula for stirring because it is more gentle on the berries than a wooden spoon.
Making the Galette Crust
First, combine all of the dry ingredients and plus the ground almonds in the pie crust recipe. Then, cut the cold butter into the flour mixture until it resembles coarse crumbs.
Next, add cold water, a little at a time, until the dough starts to come together. After that, turn the dough out on a work surface and shape it into a 6 inch circle.
Wrap the dough round in plastic wrap, and freeze for 30 minutes. Then, place dough on a large sheet of parchment paper and roll dough with a rolling pin into a 16-18″ in circle that’s around 1/8 inchthick.

Assembling the Fruit Galette
Pile the berry mixture in the center of the dough. Then, fold the edges of the crust over top of the fruit.
Transfer the assembled galette with the parchment onto a large sheet pan. Next, whisk together the egg and water, then brush the top of the dough with the egg wash and sprinkle turbinado sugar on top.
Baking this Mixed Berry Galette
Lastly, you’ll bake the assembled galette at 400 degrees F until the crust is golden brown and the berry mixture is bubbling, about 35-45 minutes.

Mixed Berry Galette Recipe Notes and Tips
Here are the answers to a few commonly asked questions about preparing this summer galette recipe:
Can This Summer Galette Recipe Be Made in Advance?
I don’t recommend making the entire mixed berry galette in advance, but you can make the pastry dough ahead of time (24-48 hours) and store it in the refrigerator until you are ready to assemble the rest of the recipe. You can also freeze pie dough.
Is it Okay to Substitute Frozen Berries in a Galette?
I personally do not like to use frozen berries when baking pies, because I find that the frozen berries become watery and can cause the buttery crust to turn out soggy on the bottom.
If you absolutely need or want to try it out anywhere, here’s my advice:
Using Frozen Berries to Make a Galette
First, completely thaw the berries in a colander or strain and drain all the excess liquid.
Then, I would recommend adding extra cornstarch (likely double the amount) to the berry mixture. This way, any excess juices that are released will thicken up with the berries instead of remaining watery.

What to Serve with this Mixed Berry Galette
My favorite way to serve this berry galette with a big dollop of lightly sweetened, freshly whipped cream, but this galette can be dressed up a number of ways:
- Berries tastes great with fresh herbs, so try adding a bit of chopped fresh mint sprinkled on top of each slice just before serving.
- Berries and Basil are also natural flavor compliments, so you could add some fresh chopped basil along with your pile of whipped cream.
- Serve this free-form berry pie with a big scoop of vanilla ice cream.
How to Store Leftover Mixed Berry Galette
Having leftovers of this delicious berry galette recipe isn’t usually high on our list of problems. If you’re family or friends don’t devour this summer dessert like we do, here’s how to handle leftovers:
- Place leftover berry galette on a plate and cover it with plastic wrap. Then, store it on the counter at room temperatures for up to 2 days.
- For longer storage, you can also keep leftover galette in the refrigerator. The leftovers will last about 4-5 days when refrigerated. If you refrigerate, it is best to let leftovers come to room temperature before serving, or microwave for a few seconds to warm.
- Note: leftover pie crust will typically be softer than fresh out of the oven.
When we do have leftovers of this rustic pie with berries, I often enjoy eating a slice for breakfast with a scoop of vanilla greek yogurt on top of the berry mixture instead of whipped cream.

Mixed Berry Galette
Ingredients
For the Crust:
- 1/2 cup ground unsalted almonds
- 1 1/3 cup all-purpose flour
- 1/2 cup white whole wheat flour
- 1/4 teaspoon salt
- 1/4 teaspoon ground cinnamon
- 2 teaspoons turbinado sugar
- 12 tablespoons butter
- 4 - 6 tablespoons ice cold water
For the Berry Filling:
- 2 1/2 tablespoons cornstarch
- zest and juice of 1 lemon
- 2/3 cup sugar
- About 2 pounds mixed berries: blueberries, raspberries, and blackberries
For the Egg Wash
- 1 Egg
- 1 tablespoon Water
- 1 tablespoon Turbinado Sugar
Instructions
For the Galette Crust:
- Cube the butter into 1/2 inch pieces. Place them on a freezer-safe plate or cutting board and freeze until very firm, approximately 30 minutes.
- Sift together the flours, salt, cinnamon, and sugar. Add the flour mixture to a food processor (10 to 12 cup size) along with the butter.
- Pulse the ingredients until the butter is cut into coarse crumbs.
- Add the ice cold water 2 tablespoons at a time while pulsing the food processor until the mixture becomes a crumbly dough and forms together.
- On an un-floured surface, turn the dough out and shape it into a circle approximately 6" in diameter, kneading as little as possible (pockets of butter are what keep the crust flaky and tender).
- Dust both sides of each circle with a bit of flour and wrap in plastic wrap. Freeze for 30 minutes or refrigerate for an hour. This may be made ahead of time and thawed slightly at room temperature as well.
- Remove the dough from the refrigerator or freezer. Set it aside while you dust a large sheet of parchment paper and rolling pin with flour.
- Unwrap one dough circle and roll with a rolling pin on top of the parchment paper until the dough has formed a circle about 16-18" in diameter and slightly thicker than 1/8 inch.
- When the dough is the proper size, set aside until berries are ready.
For the Berry Filling:
- In a food processor, combine the cornstarch, lemon juice and zest, and sugar. This will finely chop the zest and release the oils from the lemon into the sugar.
- Transfer the sugar mixture to a medium bowl and stir in the berries. Set aside.
Assembly:
- Preheat the oven to 400 degrees F.
- Pile the berry mixture in the center of the crust leaving a large border around the edges, about 3-4 inches.
- Fold the edges over. Transfer the pie with the parchment paper to a large baking sheet or baking stone (if using the stone, heat it in the oven when you're preheating to the bake temp).
- Whisk together the egg and the water for the egg wash. Then, using a pastry brush, brush the mixture over the exposed crust.
- Sprinkle the egg wash with the turbinado sugar.
- Bake at 400° for 35 - 45 minutes or until crust browns and berry mixture is bubbling.
- Remove from oven. Cool 10 minutes. Serve with ice cream, whipped cream, or Greek yogurt (for breakfast!).
