– Olive Oil – Yellow Onion – Carrots – Celery – Fresh Garlic Cloves – Red Bell Peppers – canned Fire Roasted Tomatoes – Homemade Turkey Stock – Turkey – Fresh Thyme – Bay Leaf – Haricot Verts or Green Beans – cooked Rotini Pasta – finely chopped Fresh Parsley – Sea Salt, to taste – Black Pepper, to taste – Fresh Parmesan, for serving

The BEST Turkey Vegetable Soup

1. Add the oil to a large dutch oven or stock pot. Heat over medium heat until the oil is shimmering.

2. Add the onion and saute for 3 minutes. Add the carrot, celery and garlic and continue to saute until the onion and celery are tender and the mixture is fragrant.

3. Add the bell pepper and saute for 2 more minutes.

4. Next, add the diced tomatoes and their juices, turkey stock, shredded turkey, thyme, and bay leaf.

5. Bring the mixture to a boil over medium heat, then reduce the heat to low and simmer for 30-45 minutes.

6. Add the green beans and simmer until they reach your desired tenderness, about 5 minutes longer.

7. Stir in the cooked pasta and parsley. Remove the thyme sprigs and bay leaf.
