PREHEAT & PREP

1. 1. Preheat oven to 400°F. In a large mixing bowl, toss together the rhubarb, strawberries, sugar, cornstarch, orange juice, orange zest, and optional salt. Stir well to coat the fruit evenly. Pour into a greased 9x13-inch baking dish or similar-sized oven-safe dish.

2. Meanwhile, in a separate bowl, combine the flour, granulated sugar, brown sugar, baking powder, and salt. Blend in the cold butter using your fingertips or a pastry blender until the mixture resembles coarse crumbs. Pour in the heated buttermilk and stir gently until just combined. The batter will be soft and slightly thick.

3. Drop the topping by spoonfuls over the fruit, spreading gently if desired, but leaving some gaps for bubbling.
