Spinach and Mushroom Lasagna

Spinach Mushroom Lasagna is an easy but impressive vegetarian dinner recipe that’s perfect for both holiday entertaining and weeknight dinners – especially a large crowd.

PREHEAT THE OVEN

Preheat oven to 375ºF.

COOK THE NOODLES

Cook lasagna noodles according to package directions, tender but still firm. I like to cook a few extra in case any of them rip during the cooking process.

DRAIN

Drain noodles; rinse with cold water. Drain well.

Meanwhile, in a large skillet cook onion, mushrooms, and garlic in hot butter till tender but not brown. Make sure the mushrooms have released all of their liquid.

STIR IN

Stir in sweet peppers if using. Set aside.
