Candy Cane Crunch Funfetti Sugar Cookie Bars

Christmas Sugar Cookie Bars are super festive with red and green funfetti sprinkles in the bars and crushed candy cane pieces on top!

This is one of my favorite easy Christmas cookie recipes to make. You still get to enjoy a chewy sugar cookie with a thick layer of frosting. These cookies have a nice, tender crumb just like soft sugar cookies.


1. Preheat oven to 350 degrees F. Prepare a baking sheet sized approximately 16 x 11 by lining it with parchment paper. Set aside.


2. In the bowl of a stand mixer, combine the butter and the granulated sugar and beat, using the paddle attachment, on high for 3 - 5 minutes or until the butter and sugar is fluffy and creamed. You may need to stop the mixer periodically and scrape down the sides of the bowl using a spatula.


3. Add the flour mixture 1 cup at a time to the stand mixer bowl, stirring on low speed with the paddle attachment, until all of the flour has been incorporated into the dough.


4. Press the dough into the prepared baking sheet, ensuring that it is evenly level across the top and that it fully reaches the corners of the pan.
