Lemon Poppy Seed Scones

1. Combine the flour, baking powder, sugar, salt, and lemon zest. Cut the butter into the flour mixture until it resembles coarse sand.


2. In a small bowl, combine the eggs, buttermilk, lemon juice, and vanilla extract together. Whisk until well combined.

3. Make a well in the center of the flour mixture, pour in the egg mixture and stir until it comes together. Stir just until the dough is moist, do not over mix.
