Spinach Pear Salad with Balsamic Vinaigrette

PREP DRESSING

1. Add all of the ingredients to a mason jar. Secure the lid and shake until combined. Alternatively, whisk the ingredients together in a glass measuring cup using a whisk.

ROAST POTATOES

2. Preheat oven to 425°F. Toss sweet potatoes in olive oil, salt, pepper, and garlic powder. Roast in a cast iron pan for 20-30 mins, stirring for even browning. Once tender and golden, stir in fresh herbs and set aside.

ASSEMBLE

3. Gently toss the spinach and arugula together. Then, arrange on a large platter. Top with the sweet potatoes, pears, pomegranate arils, red onion, and pumpkin seeds.
