1. In a medium saucepan, combine the lemon juice, lemon zest, and sugar. Heat over medium heat until simmering. Then, turn the heat to low.


2. In a medium saucepan, heat the lime juice and sugar mixture over medium until it simmers, then reduce to low heat. After the sugar dissolves, strain the zest using a fine mesh strainer into a bowl or measuring cup.


3. Slowly pour half of the citrus mixture into the yolks while vigorously whisking.
