1. Combine the roma tomato, onion, cucumber, garlic, lemon, lemon zest, and oregano in a medium sized mixing bowl.


2. Stir until the ingredients are well distributed. Season with salt and pepper to taste. Transfer the ingredients to a serving bowl.


3. Cover with plastic wrap and refrigerate for 30 minutes to 2 hours, until chilled and flavors are developed.
