High-Protein Pumpkin Muffins

High-Protein Pumpkin Muffins are sprinkled with a spiced crumble topping before being baked. These taste like your favorite pumpkin muffins, but they’re packed full of protein and will keep you fuller for longer!

Pumpkin pie spice protein powder adds both flavor and tons of protein to this simple recipe. There’s also full-fat Greek yogurt in the batter, which adds both protein and moisture.

PREHEAT

1. Preheat the oven to 400 degrees F. Grease standard sized muffin tins. Set aside.

2. Combine the flour, brown sugar, and pumpkin pie spice in a bowl. Stir until combined. Add the butter and cut into the flour mixture until the mixture resembles coarse crumbs. (Alternatively, you may use a food processor) Set aside.

3. In a medium mixing bowl, combine the pumpkin purée, melted butter, Greek yogurt, eggs, and vanilla extract. Mix using a wire whisk until the eggs are beaten and fully combined with the other ingredients.
