Orange Ricotta Pancakes

prep SYRUP

1. In a small saucepan, combine ½ cup maple syrup, ¼ cup orange juice, and 1–2 strips orange zest.

SIMMER

2. Simmer gently over low to medium heat for 3–5 minutes, just until warmed and fragrant—do not boil. Remove from heat, discard the zest, and stir in ½ teaspoon lemon juice and ⅛ teaspoon vanilla. Set aside to cool slightly while you prepare the rest.

HONEY BUTTER

3. In a small bowl, combine 3 tablespoons softened butter, 1 tablespoon honey, and ¼ teaspoon orange zest.
