Pearl Couscous Salad with Sun-Dried Tomatoes

This pearled couscous salad is full of flavors and textures galore! There’s chewy pearl couscous (aka Israeli couscous), fresh parsley and basil, sweet and tangy sun-dried tomatoes, and tart lemon juice.


1. Heat 1 tablespoon of olive oil in a heavy bottom saute pan (one that has a lid that will fit) over medium heat. When the pan is hot and the oil is shimmering, add the couscous and stir, so that it is coated with oil.


2. Cook over medium heat, while stirring, for about 2 minutes - until the couscous is lightly toasted.


3. Next, add the shallot. Sauté for 2 - 3 minutes. Then, add the garlic and sauté for 1 - 2 more minutes.


4. Stir in the chicken broth, water, lemon juice, salt, and sun-dried tomatoes. Cook the couscous until tender.
