Lime Curd

Lime Curd is a delicious, tart fruit spread that can be used in a variety of ways. It is so simple to make and is freezer-friendly.

Lime curd is thickened by whisking egg yolks to the sugar and lime juice mixture, and later stirring in butter. The egg yolks and butter that are unique to fruit curds, cause the lime curd to melt in your mouth with a luscious, mouth-watering texture.


1. Process lime zest and sugar in a food processor until finely ground to infuse the sugar with lime oils, enhancing flavor. We will strain this in the next step.


2. In a medium saucepan, heat the lime juice and sugar mixture over medium until it simmers, then reduce to low heat. After the sugar dissolves, strain the zest using a fine mesh strainer into a bowl or measuring cup.


3. Discard the strained zest. Return the juice mixture to the saucepan.
