Easy Spiced Butternut Squash Apple Soup

This Butternut Squash Apple Soup is full of wholesome ingredients and great when you need to warm up on winter nights!

It is the perfect balance of sweet and savory thanks to the natural sweetness of the butternut squash and apple.


1. Preheat the oven to 400 degrees F. Cut the squash in half, then again lengthwise. Scrape out the seeds and discard.


2. Drizzle the inside of the squash with olive oil, season with salt and pepper according to preference, and place with the flesh side up in a baking pan.


3. Cover with foil and bake for 30 minutes. Then, remove the foil and continue to cook for 30-45 more minutes, or until fork tender.
