Strawberry Basil Shrub Cocktail

A Strawberry Basil Shrub is made with fresh strawberries, basil, gin, and club soda! It’s a refreshing cocktail for spring or summer dinner parties, barbecues, and pool days.

When discussing cocktails, a “shrub” refers to a vinegar-based syrup that’s been sweetened and infused with fruits, herbs, or spices. Shrubs are generally made using a 1:1:1 ingredient ratio of fruit, sugar, and vinegar.

PREPARE  THE SHRUB

1. Combine the strawberries, apple cider vinegar, and granulated sugar in a 2 quart sized saucepan. Stir to combine. Bring the mixture to a boil over medium high heat and let boil for 2 minutes.

BOIL

2. Bring the strawberry mixture to a boil over medium-high heat, stirring the mixture so the sugar dissolves.

SIMMER

3. Reduce heat to medium-low and simmer for 5 minutes. Remove from heat and cool completely.
