Homemade Dark Chocolate Gelato

The gelato is made with 7 basic ingredients, including both cocoa powder and dark chocolate for a bold chocolate flavor. The flavor is more rich than sweet since there’s less than a cup of sugar in the entire batch.

PREP THE BASE

1. In a medium saucepan, whisk together the cocoa powder, sugar, and sea salt. In a small bowl, stir the cornstarch with ½ cup of the milk to form a smooth slurry.

COOK & SIMMER

2. Gradually whisk the slurry and the remaining 2¼ cups of milk into the cocoa mixture. Set the pan over medium heat. Whisk often until it begins to gently bubble.

SIMMER

3. Reduce heat to low and simmer for 2–3 minutes, whisking constantly, until thickened to a loose custard consistency. Remove from heat. Stir in the chopped chocolate until completely melted and smooth.
