Linguine with Lemon-Roasted Asparagus and Goat Cheese

Ask me what my favorite spring vegetable is and I’ll probably tell you asparagus. It’s been one of my favorites for as long as I can remember. I still have memories of eating it and loving it as a young child, even before kindergarten. When I was older, my siblings would sneak some of theirs onto my plate because they didn’t like it (though they do now as adults) and knew I did.

Over at CRAFT this month the theme is gardening. Fits nicely with the start of GrowCookEat over here, don’t you think? Asparagus is one of my favorite spring vegetables and one that we planted in our garden last year. Wednesday I shared a recipe for Linguine with Lemon-Roasted Asparagus and Goat Cheese as a great “garden to table” recipe.

    I made this for dinner last night and it was really gorgeous! The roasted asparagus and shallots in the lemon garlic dressing was perfect. The only difference was in the quantities of pasta used – I found that 150g of linguine was more than enough for 2 of us. Yummy recipe; thanks for posting.

    As strange as it may sound I hadn't had Asparagus until about a year ago. My mom has never liked it so we never had it growing up. But, both me and my husband love it and I'm always trying to find more recipes to use it. This looks perfect!

    I love that you roast the asparagus as well. I do it all the time. It just brings out the most wonderful taste. Lovely dish. Great for a week night dinner. Thanks.
