Chewy Pumpkin Granola Bars

This Is a Favorite Fall Snack in Our Family
I’ve purchased my fair share of granola bars over the years (having a house full of kids means the pantry must always be well stocked with snacks!). And I’m sure I’ll purchase many more in future!
But whenever I can, I try to prep a batch of homemade granola bars so I can control how much sugar and oil go into them. These pumpkin oat granola bars are my favorite to make throughout the fall, and my kids gobble them up in no time!
Here’s why I think you should make these granola bars too:
✔ Wholesome Ingredients: I think these granola bars provide a great balance of healthy ingredients along with a little something to satisfy a sweet tooth.
✔ No Oil: Store-bought granola bars are often packed with seed oils, but this recipe contains none whatsoever. Unsweetened applesauce substitutes the oil in these granola bars, and I promise you can’t taste the difference.
✔ 5 Minute Prep: The ingredients take just a few minutes to mix together, then the granola mixture is dumped into a baking dish and the oven does the rest of the work for you!

Ingredient Notes
I’ve provided the full list of ingredients with their measurements in the recipe card below, but let’s take a look at the key ingredients you’ll need to make your own granola bars with pumpkin.
- Oats — I recommend using old-fashioned oats rather than instant oats. Old-fashioned oats are much chewier and won’t crumble apart.
- Chocolate chips — We like using mini dark chocolate chips, but you can use any kind you like.
- Pumpkin seeds — AKA pepitas. They add a little protein and lots of crunch! Sunflower seeds or hemp seeds would work well in place of the pepitas if you can’t find them.
- Pumpkin puree — I used a can of pumpkin puree for ease, but you can make your own pumpkin puree if you want to go the fully homemade route. Make sure you’re using pure pumpkin and not pumpkin pie filling!
- Applesauce — Unsweetened is preferred, but any kind will work. The applesauce is used as an oil substitute so we can keep these granola bars on the healthier side.
- Sweeteners — I used a blend of brown sugar and agave to sweeten the granola bars. The brown sugar adds a caramel-y flavor, while the agave helps hold the oat mixture together.
- Vanilla extract — I’ve always got a bottle of my bourbon vanilla extract on hand, but any kind is fine.
- Chai spice blend — I used a store-bought chai spice blend to flavor the bars, but pumpkin pie spice or even gingerbread spice will deliver a similar warming flavor.


How to Make Pumpkin Granola Bars
- Line a 9×9-inch pan with parchment paper. The oat mixture is very sticky, so just greasing your pan isn’t enough.
- Mix everything together. For even mixing, combine the wet ingredients in one bowl and the dry in another. Then, combine everything.
- Bake. Turn the oat mixture into the prepared pan and pat it down into an even layer. Granola bars need to bake for about 30 minutes at 350ºF. You’ll know they’re done once they’re lightly golden on top.
- Cool completely before slicing. If you try to slice the bars warm, they’ll fall apart!

Pumpkin Granola Bars Recipe
Celebrate fall with these chewy pumpkin granola bars featuring oats, real pumpkin puree, chai spices, mini chocolate chips, and pepitas!
Ingredients
- 3 cups Old Fashioned Oats
- 1/2 cup - 2/3 cup Mini Dark Chocolate Chips
- 3/4 cup Pepitas
- 1/2 cup Pure Pumpkin Puree
- 1/4 cup Unsweetened Applesauce
- 3/4 cup packed Brown Sugar
- 1/4 cup Agave or Honey
- 1 teaspoon Vanilla Extract
- 2 teaspoons Chai Spice Blend
- 1/2 teaspoon Sea Salt
Instructions
- Preheat oven to 350ºF. Line a 9x9-inch baking pan with parchment apper. Leave an inch or two of parchment paper hanging over the sides so that you can easily remove the granola bars from the pan. Set aside.
- Combine the dry ingredients. In a mixing bowl, stir together the old fashioned oats, mini chocolate dark chips, and the pepitas. Set aside.
- Combine the wet ingredients. In another mixing bowl, add the pumpkin puree, unsweetened applesauce, brown sugar, agave, vanilla extract, chai spice blend, and sea salt. Stir until the ingredients are evenly blended, scraping down the sides of the bowl with a spatula as necessary.
- Add the dry ingredients to the wet. Stir until the oats are moist and all ingredients are fully incorporated, making sure to scrap down the sides of the bowl with the spatula.
- Bake. Transfer the mixture into the prepared pan, making sure to spread the mixture evenly in the pan. Press it down using the spatula until it is tightly packed and level on the top. Bake for 30 - 40 minutes, or until golden brown. (Note: the pumpkin puree adds moisture, do not under bake or the bars will have a difficult time holding their shape.)
- Cool completely before slicing. Remove from the oven and cool completely on a cooling rack. Once cool, cut into 12 bars.
Notes
Chai spice: I used a store-bought chai spice blend to flavor the bars, but pumpkin pie spice or even gingerbread spice will deliver a similar warming flavor.
To store: Cool completely, then transfer them to an airtight container and store at room temperature for up to 5 days. Granola bars also freeze well and will last up to 2 months.

Making these now but substituted a few things. No Chai spice. Semi sweet minis instead of dark chocolate. And I used super oats with chai and quinoa. First batch is ready to come out of the oven. The second batch I added Mōdere spice sustain powder.
