Roasted Peach Crostini with Brown Sugar and Ginger [Giveaway]

Appetizers and Snacks, Dessert, Fruit Desserts, Giveaway | 118 comments

I have been loving peaches this summer. I’ve been dreaming of Roasted Peaches, Grilled Peaches, Peach Cake, and Peach Cobbler all summer. Unfortunately, summer got the better of us.

Each week I buy around a dozen of them and I’m usually never left with any to play with in the kitchen. Every batch has been just as tasty and juicy as I can imagine and we can’t help but gobble them up just as nature intended. And most often we were too busy playing at the pool to be bothered with baking.

I finally wised up, you know, now that summer is just about over. I bought a few extra than we really needed. I am determined to get at least a few peach desserts on the table after dinner before this perfect fruit is gone for the year. I’ve had some goat cheese in the fridge and I knew just what I wanted to try: Roasted Peach and Goat Cheese Crostini.

I love to roast fruit. Roasting might traditionally sound like something for meat or vegetables, but it produces amazingly sweet and tender flavors in fruit as well. Go ahead, give it a try! If it’s too hot to turn on the oven, you can also roast peaches in the toaster oven.

You can enjoy this  Roasted Peach Crostini  recipe as a simple fruit dessert after dinner or serve it as an appetizer or snack. It is perfect for either occasion.

I might be guilty serving these roasted brown sugar ginger peaches over a bowl of yogurt and granola. Roasted Peaches might also be pretty near perfect when served over a simple bowl of homemade ice cream.

Giveaway Prize (1 winner):

Belle Chevre, the provider of this giveaway, is a purposefully small goat cheese company from Alabama, employing a few women and hand-making goat cheesesince 1989.

They are launching a pairing with INNA jams. INNA makes jams in small batches using organic ingredients sourced within 100 miles of their kitchen in Emeryville, CA (and bicycle is their preferred mode of delivery). Jam and chevre are delicious paired together!

Giveaway Requirements:

  • What is your favorite way to eat goat cheese?
  • Contest ends September 13, 2012 at 11:59 p.m. PST.
  • Contest open to US States only.
  • Winners will be chosen via random.org and will have 3 days to respond before disqualified and a new winner chosen.

Roasted Peach Crostini

Print Save Recipe

Ingredients:

3 large peaches, pitted and cut into slices
1 1/2 tablespoon butter, melted
3 tablespoons brown sugar
1 teaspoon vanilla
pinch of salt
pinch of cinnamon
2 drops pure ginger essential oil or 1 teaspoon fresh minced ginger
Baguette, sliced

Directions:

Preheat oven to 425 degrees F.

Combine the butter, sugar, vanilla, salt, cinnamon and ginger. Toss with the peaches until coated.

Pour the mixture into an oven safe cast iron skillet (I like my Le Creuset Enameled Cast-Iron Skillet). Roast at 425 degrees F for 15 minutes.

Meanwhile, toast the sliced baguette. Spread each generously with goat cheese. Top with roasted peaches and a drizzle of the juices from the pan. Eat and enjoy!

I was provided with review product and giveaway fullfillment by Belle Chevre, but all opinions and experiences with the product remain my own opinion.

I would actually be a vegan if it weren’t for cheese! Try as I might, I just can’t quit it. I love it so much. When I think of things that wouldn’t be the same without cheese, my mind immediately goes to pizza, so I’ll go with that as my favorite way to eat it.

my favorite way to eat goat cheese is with blackberry jam or just off of my finger with some herbs sprinkled on top for a “get by” tasty morsel in the afternoon!

    also re-pinned the recipe!

    Crumbled,chunked,crostini-ed.
    Spooned,stuffed,spread.
    Morning,noon,night
    Chevre-color dreams in my head!
    All alone,in a crowd.
From the wrapper, on a platter.
    Mmmm..I’m thinking…How bout this one?
A wayward “goat” in the cheesecake batter?

I prefer to enjoy Goat Cheese on a piece of crusty bread and with a nice glass of wine. :)
