Sun Dried Tomato Spinach Pesto + Blendtec Giveaway

I pulled off the remaining leaves from my three basil plants the other day. It has gotten quite cool here (loving that!), so I didn’t think the plants would be around much longer. We are dipping down to around 40 degrees at night lately.

I had just purchased a big container of sun dried tomatoes as well as a box of organic baby spinach so I decided to whip up a batch of Sun Dried Tomato Spinach Pesto sauce using those ingredients and the last of the basil.

Pesto is such a fun accent to many recipes and meals. Unfortunately, I am allergic to pine nuts which are a traditional component to pesto sauce recipes. I have resigned myself to making pesto at home a few times a year since I am unable to enjoy it most of the time when we go out to eat.

I have to say, I’m a big fan of this recipe for Sun Dried Tomato Spinach Pesto. It is so useful in the kitchen. Just take a look at all the fun ways you can use pesto.

5 Easy Ways to use Pesto:

1. As a sandwich spread. Pesto is a great way to dress up a sandwich and give it a little something special.

2. In place of pizza sauce for an exciting pizza recipe. Pizza sauce doesn’t always have to be a basic tomato sauce.

3. As a spread or dip for a rustic Italian bread. Consider adding roasted vegetables and a sprinkling of cheese on top of the pesto topped bread for a delicious appetizer.

4. Add a dollop to a bowl of soup. This is perfect in the winter months when you’d like a little something leftover from summer added for extra flavor. Freeze pesto in ice cube trays and drop one frozen cube in the center of a hot bowl of soup. This also helps cool too-hot soup off!

5. Toss it with pasta for a quick meal. If you have more time, add grilled or sauteed vegetables and/or your favorite source of protien. Grilled chicken with pesto and pasta is awesome!

I have raved about my Blendtec Blender before. I love how powerful it is and how it doesn’t leave chunks in my smoothies. Plus, it looks attractive on the counter!

Sun Dried Tomato Spinach Pesto

Total Time: 5 minutes

Print Save Recipe

Ingredients:

1/4 cup olive oil
1/2 teaspoon lemon juice
3 cloves garlic
3 ounce baby spinach leaves
1 ounce fresh basil leaves
1/4 cup walnuts or shelled sunflower seeds
3 tablespoons fresh parmesan or romano cheese, grated
1/2 cup sun-dried tomatoes (drained if packed in oil)
1/4 - 1/2 teaspoon salt, or to taste

Directions:

Add oil, lemon juice, garlic, spinach and basil to jar and push basil down into oil and secure lid. Press "Pulse" 6-8 times until basil is roughly chopped.

Add the remaining ingredients in order listed and secure lid. Press "Pulse" 4-6 times until purée texture is reached.

If using the Twister Jar, simply add ingredients and twist the lid counter-clockwise while the blend cycle is running. This twisting motion forces the ingredients from the sides of the jar back into the blade, achieving a perfect blend every time.

Pesto will keep covered in refrigerator up to 3 days. For long-term storage, freeze in small portions using an ice cube tray and transfer the frozen portions to a freezer safe zip top bag.

    Oh man! I would love a Blendtec blender! I make smoothies almost daily (in a cheapo blender that smells like it’s burning every time I use it), and love the durability I have heard that Blendtec provides so that I can make other things in my blender such as nut butters, pesto, dressings, milkshakes, frozen beverages, etc. with ease!

    I love my Blentec and so does my daughter in college. She calls and asks how do I do this or that without a Blentec :-) I would love a Designer Series Wildside and then I could graciously give her my Classic Wildside. One of my favorite features is I grind my wheat in it. It does pit the jar, but I have two. So one looks brand new and I got rid of my big, bulky grinder.

    I’ve been eyeing the BlendTec Designer Wildside blender for many months, and have to admit that the “Will it Blend” videos have definitely sucked me in. I struggle with a blender that’s not quite powerful enough to make a proper pesto, and a food processor that starts to smell like it’s burning when I make nut butters…and I keep thinking that a BlendTec is the answer, so I’d love to win!

    I would happily take any of the blendtec blenders! The shape of their jars/capacity/the fact they are BPA free-all great. I love their power-I tried out my mom’s the last time I visited her and it just ran so smoothly and quietly despite what was happening in the jar:) I also love that they provide so many recipes on their site.

    I definitely want the Total Blender Classic WildSide! Why? Partially because the name is exciting and has me sold, but more so because I want to start blending on a daily basis. Smoothies to incorporate my daily servings of veggies and fruits. On a side note, I was just talking to some of the girls in my office yesterday about how there were a web series a couple years ago where they would take an industrial blender and blend everything from old school iPods to other electronics. Not proposing this but I thought it was a fun coincidence :)

    I have looked at these blenders before and loved them but couldn’t afford to spend that much. I was trying to find something for my grandmother who is fighting colon cancer and is expierencing all the side effects of chemo, the big one being she has trouble swallowing. I thought that the perfect thing for her would be soups and smoothies. I like that you blend the entire fruit or vegetable that way you are getting all the nutrients. I also like the BPA free pitcher.

    My friend Mary has Estrogen Positive Breast Cancer. To properly be treated and heal from this she has a special diet of about 35 things she can eat. My friend Jolene has helped me prepare all of Mary’s food since she was diagnosed and given this special diet. About once a week Jolene and I create amazing food using my Blendtec blender and put it in Mary’s freezer. We are becoming specialists at this diet. I LOVE my Blendtec because we can make rye bread using sprouted berries, pumpkin quiches, berry syrup, rice and lentil pancakes and a myriad of other wholesome entree’s and sides. Every time she works in my kitchen Jolene tells me how much she wants one of these awesome machines. If I win I will give Jolene the new one but I do believe I will keep the twister jar for myself! I couldn’t do it without her!

    Wow! It’s so nice to see a pesto recipe that doesn’t inclue pine nuts. I’m excited to try it! (I am also allergic).

    As far as features go, I would LOVE a lump free smoothy! I also use my blender for my canning recipies so it would be nice to have one that can keep up with me. The ice to snow option also looks awesome. I know one 5 year old that would love some homemade snow cones!

    Wow – I didn’t know that such fancy blenders existed! The Designer Series would be my preference, but certainly The Classic Wildside would be a huge upgrade from the cheap old Hamilton Beach.

    These blenders look so durable…I am sure they would not have a problem blending the frozen bananas for my morning smoothies like my current blender. Also, I REALLY love that they are made in the US and the company employees hundreds of people.
