Cheesecake Cups Are Always a Winner!
I love seasonal desserts that are so simple to prepare yet always seem to impress people, and these pumpkin cheesecake cups are exactly that! Despite this being an entirely no-bake recipe, the layers of creamy pumpkin cheesecake and gingersnap crust never fail to garner rave reviews.
Here’s why I think you should make these for your next fall dinner party:
✔ Quick and Easy: The cups take less than 30 minutes to assemble, then they just need to chill in the fridge to set. That’s it!
✔ Bold Fall Flavor: Gingersnap cookie crumbs are so much more flavorful than a traditional graham cracker crust, and the blend of spices in the pumpkin cheesecake add so much warmth.
✔ No Special Equipment: I used individual parfait jars to assemble my cheesecake cups, but you can use any mugs, cups, or jars you have on hand.

Ingredient Notes
If you don’t want to make a full-blown pumpkin cheesecake, I hear you! Making no bake pumpkin cheesecake in a cup is way simpler. The full list of ingredients can be found in the recipe card below, but here are the key items you’ll need.
- Gingersnap Cookies — Reserve some whole gingersnap cookies from the gingersnap crust if you want a fun garnish on top.
- Melted Butter — Binds together the gingersnap crumbs without having to bake it first.
- Cream Cheese — Choose full fat, brick-style cream cheese, NOT low-fat or whipped cream cheese.
- Sugar — I used a blend of granulated and brown sugar for sweetness and depth.
- Whipping Cream — Breaks up the cream cheese to create a pudding-like consistency.
- Pumpkin Puree — If using homemade pumpkin puree, strain it through a cheesecloth-lined fine mesh sieve to remove as much excess moisture as possible. Otherwise I recommend using a quality brand of puree (I like Libby’s).
- Spices — I used a blend of cinnamon, allspice, cloves, and cardamom, but you can swap in pumpkin pie spice if desired.
- Pecans — May be omitted or swapped with chopped walnuts. I like the crunch that pecans add!
Don’t have pumpkin puree? You can use sweet potato puree or butternut squash puree instead!

How to Make Pumpkin Cheesecake Cups
- Make the gingersnap crust. If I’ve got time, I like to toast the gingersnap crumbs to firm them up, but this step is optional!
- Make the pumpkin cheesecake filling. You’ll combine the cream cheese, sugars, whipping cream, and vanilla in a food processor and process until all combined and smooth. Then, you’ll stir the pumpkin in.
- Layer in jars. All you do is layer the gingersnap crust, pecans, and cheesecake filling in small individual sized jars, dessert dishes, or glasses. (To easily fill the jars, transfer the cheesecake filling to a pastry bag or large zip-top bag with a corner snipped off and pipe the filling into jars.)
- Chill before serving. Aim for at least 1 hour in the fridge, but these can be prepped a couple days in advance.
Katie’s Tip: Add some vanilla extract to your whipped cream for some extra flavor and / or sprinkle it with a dusting of cinnamon or pumpkin pie spice for extra special presentation.

Make-Ahead Instructions
- Gingersnap Crust — Cool completely, then store in a plastic zip top bag or a sealable food storage container in the refrigerator up to 3 days in advance.
- Cheesecake Filling — Refrigerate airtight 1-2 days ahead of time.
- Whipped Cream — Is best made just before serving. If you need to make it in advance, swap it out with stabilized whipped cream.
- Fully Assembled Cheesecake Cups — Can be made up to 1 day ahead of time. Cover each individual cheesecake jar with plastic wrap when storing in the refrigerator if making ahead (this will help keep it fresh).
Katie’s Tip: If you need to make these cheesecake cups earlier than 24 hours ahead of time, I recommend just prepping the individual elements.

These no bake pumpkin cheesecake cups feature yummy layers of gingersnap crust and spiced pumpkin cheesecake filling. They're a quick and simple fall dessert that can be assembled in advance!
Ingredients
For the Gingersnap Crust
- 1 cup gingersnap cookie crumbs
- 1 tablespoon butter, melted
For the Cheesecake Filling
- 16 oz. cream cheese
- 1/4 cup granulated sugar
- 1/2 cup brown sugar
- 1/4 cup whipping cream
- 1 teaspoon vanilla extract
- 14 ounces pure pumpkin puree
- 1/2 teaspoon cinnamon
- 1/4 teaspoon allspice
- 1/8 teaspoon cloves
- 1/8 teaspoon cardamom
- 1/2 cup chopped pecans
For Garnish
- 4 whole pecan halves
- Extra Gingersnap Cookies
- Whipped Cream
Instructions
- Make the gingersnap crust. Crush the gingersnaps to create crumbs. You can do this by adding the gingersnaps to a food processor and pulsing until crumbs or place the gingersnaps in a plastic bag and crush using a meat mallet. Add melted butter, stir well to combined. Spread on baking sheet and optionally toast in a 350ºF oven 3 – 5 minutes until crumbs start to brown. Cool.
- Make the pumpkin cheesecake filling. Process the cream cheese, sugars, cream, and vanilla in a food processor until smooth. Add the pumpkin puree, cinnamon, allspice, cloves, and cardamom. Process until smooth.
- Layer in cups. Spoon half of the gingersnap crumbs into four 1/2 cup-capacity jars, then layer on a few chopped pecans. Divide half of the cheesecake mixture evenly between the jars. Repeat with the remaining gingersnap crumbs, pecans, and cheesecake mixture to fill the jars all the way to the top.
- Refrigerate for a minimum of 1 hour. You need the cheesecake mixture to be firm enough to serve (it should have the consitency of a firm pudding).
- Garnish and serve. Top with whipped cream, pecans, and/or gingersnap cookies.
Notes
Notes about the texture: This is not the same consistency as a baked cheesecake. The cheesecake layer is thinner than that, more like a thick pumpkin pudding. If you prefer a slightly thicker cheesecake layer you may try omitting the whipping cream, however I have not tested that variation.
