Fajita Panini
As a mom and wife first, I stay pretty busy. To help with my time management, I have found that the dinner cooking schedule the suits me best is every-other-day. Because I cook like this, it isn’t often that I have the chance to use dinner leftovers for another meal and create something new out of it; we’re always eating the leftovers for dinner the next day.
Last week when I made the flank steak fajitas, we had more than enough meat for two night’s worth of dinner. With the leftover meat I threw together a quick lunch that was super tasty! This is a great way to use up leftover flank steak, but like I told Eric – it’s good enough to make on purpose. We were out of bread (or maybe it was in the freezer still), so I used a tortillia. I had never tried putting a tortilla in a panini press before, but it worked quite well.
- Leftover Flank Steak
- Flour Tortilla
- Cheddar Cheese
- Bell Pepper, thinly sliced
- Cilantro, chopped
- Red Onion, Sliced
Layer on half of a tortilla: cheese, peppers, steak, cilantro, and red onion. Top again with a thin layer of cheese. Fold in half and grill in a panini press until ingredients are hot, tortilla is browned, and cheese is melted. Enjoy with salsa or guacamole.
