It is hard to believe that summer is just around the corner. We’ve had really mild warm weather or cold rainy or snowy weather. I’ve only turned the air conditioner on in the house once so far this year. That feels a little bit awesome. A year ago this time it was practically full on summer.

Even thought our weather has been pretty mild, I still have summer on the brain. There are only a few weeks of school left and before we know it, the pool will be open and we’ll be busting out our shorts and flip flops for good…not until the next snow.

With summer comes the fun of lazy days and get togethers with family and friends. My favorite no-fuss unofficial summer get together was taking Logan and Madeline to the neighborhood pool and meeting up with our friends for a day of fun in the sun.

I brought a small cooler packed with healthy, but tasty snacks and drinks to keep us fed and cool. We rarely at lunch at home during the week because the kids and I spent our days swimming at the pool with friends and eating poolside.

In the summer I look for simple and refreshing recipes to satisfy our hunger. When I focus on foods bright in color and flavor, I am able to combine a few basics to create a really tasty meal or snack.

I love versatile starter recipes like this Avocado Peach Salsa. It is a simple and fast recipe to prepare but the fun flavor profile and bright colors compliment a variety of serving methods, making it the perfect start to several different 30-minute (or less!) meals and snacks.

How to Serve Avocado Peach Salsa

  • On top of a bed of romaine lettuce or other greens with grilled chicken, shrimp or steak, and crushed tortilla chips and call it a taco salad.
  • On top of a cilantro lime grilled flank steak for a fruity and sweet contrast to the savory grilled meat.
  • With chips and salsa as a side dish for a last minute family gathering. Think backyard BBQ or Pool Party.
  • Inside a tortilla with shredded lettuce or cabbage and grilled shrimp, chicken or steak. Taco night!
  • For a vegetarian taco night, add some black beans to the salsa mixture and spoon it into a lettuce or cabbage stuffed tortilla.
  • Tossed with chilled quinoa or couscous for a side dish. Add some black beans and you have a quick and refreshing vegetarian meal.

Avocado Peach Salsa

Yield: about 3 cups

Total Time: 10 minutes

Ingredients:

8 ounces Avocado, diced into bite sized pieces
juice of 2 limes
8 ounces Archer Farms® Frozen California Peaches, diced into bite sized pieces
1 poblano pepper, deseeded and diced
1/4 cup of diced red onion
1 handful of cilantro, finely chopped

1 drop 100% Pure Lime Essential Oil

Serve with Archer Farms® Organic Blue Corn Tortilla Chips

Directions:

In a medium bowl, combine the diced avocado and the lime juice. Toss to coat. Gently stir in the diced peaches, poblano pepper, red onion, and cilantro. Serve immediately with your favorite tortilla chips. I love Archer Farms® Organic Blue Corn Tortilla Chips, available at Target.

Notes:

Cutting the peaches while they are frozen makes it easier to dice them into nicely uniform pieces. Stir the peaches into the remaining ingredients while frozen and they will quickly thaw, while helping to keep the salsa cool if it is sitting out on the counter during a party or other get together.
