I love the flakiness that you get thanks to this trick for cutting butter into flour. Freeform pies, like these Fresh Strawberry Galette or this Triple Berry Lemon Galette are great when you don’t want to worry about making a perfectly shaped pie crust since they’re meat to be rustic and free form.
