It is hard to believe that summer is just around the corner. We’ve had really mild warm weather or cold rainy or snowy weather. I’ve only turned the air conditioner on in the house once so far this year. That feels a little bit awesome. A year ago this time it was practically full on summer.

  1. In a medium bowl, combine the diced avocado and the lime juice. Toss to coat. Gently stir in the diced peaches, poblano pepper, red onion, and cilantro. Serve immediately with your favorite tortilla chips. I love Archer Farms® Organic Blue Corn Tortilla Chips, available at Target.

Notes

Cutting the peaches while they are frozen makes it easier to dice them into nicely uniform pieces. Stir the peaches into the remaining ingredients while frozen and they will quickly thaw, while helping to keep the salsa cool if it is sitting out on the counter during a party or other get together.
