The past couple weeks I have had the busy and stressful, but also incredibly exciting, task for getting my house ready to list for sale.
All for good, happy and exciting reasons.
As you can imagine, that it a little bit of a challenge when you cook and write about food for a living.
Suddenly my house, and kitchen, needs to be tidy all of the time.
So, we are keeping things pretty simple in the kitchen.
Both to minimize the amount of messes that happen in the first place, and also because our new daily routine involves lots of cleaning up every day.
There isn’t a lot of time (or energy) to make something complicated.
Desserts and snacks have become simple or make ahead recipes.
One of my favorite things to snack on in the summer is fresh fruit.
So, the other day I made a bit batch of these Red, White, and Blue Berry Almond Frozen Yogurt Bites.
You can easily make a few dozen at a time and once they’re frozen, store them in a sealed plastic container in the freezer or a large zip top bag.
They totally fit the bill for something easy and sweet on a hot day, and I love that they’re bite size and don’t require dishes to eat.
If you’re looking for something simple for your upcoming 4th of July Celebration, I highly recommend giving this recipe a try.
You’ll satisfy everyone’s need for sweet while still keeping things on the healthier side, and you’ll help any guests stay cool on a hot day.
First, you’ll line mini muffin trays with liners. In the liners, you’ll add plain granola, Fisher Nut’s Sliced Almonds, then a mixture of Vanilla Greek Yogurt and lemon juice.
Nuts, like Fisher Nuts entirely preservative-free varieties, paired with granola give extra crunch and flavor to the creamy lemony vanilla yogurt and fresh fruit
To top the yogurt bites off, you add fresh Raspberries and Blueberries.
After that, all you do is freeze them until you’re ready to eat.
You can top these Red, White, and Blue Berry Almond Frozen Yogurt Bites with whatever fruit you like, but for the 4th of July I thought that fresh raspberries and blueberries would look really pretty contrasting with the white frozen Greek yogurt.

Add a layer of fresh blueberries to the bottom of this Vanilla Bean Panna Cotta with Strawberry Rhubarb Compote for a pretty patriotic layered panna cotta.
- 1 1/3 cup Vanilla Greek Yogurt
- 1 1/2 tablespoons Lemon Juice
- 1/2 cup Granola
- 1/2 cup Fisher Nut's Sliced Almonds
- 24 Fresh Raspberries
- 48 Fresh Blueberries
- Line 24 mini muffin cups with liners.
- In a small bowl, combine the Vanilla Greek Yogurt and the Lemon Juice. Stir until well mixed. Set aside.
- In the bottom of each mini muffin cup, add 1 teaspoon of granola. Then, on top add 1 teaspoon of Fisher Sliced Almonds to each.
- Top the almonds with 1 tablespoon of the Vanilla Greek Yogurt and lemon juice mixture. Place 1 fresh raspberry and 2 fresh blueberries at the center of each on top of the yogurt mixture.
- Transfer the muffin tin to the freezer on a flat surface and freeze for 50 minutes, or until frozen through. Once frozen, transfer the Red, White, and Blue Berry Almond Frozen Yogurt Bites to a sealed plastic container in the freezer or a large zip top bag.
