I’m a little late getting organized for Easter this year. We’ve decided to keep things simple and frugal this year by just having a little something for the kids instead of a whole basket of goodies. In terms of our Easter dinner we are also going to keep things a little smaller, though still special, since we won’t be able to share this special holiday with extended family this year.

  • Grilled Lemon Basil Chicken
  • Baby Red Potatoes
  • Mixed Greens and Asparagus Salad
  • Dinner Rolls
  • Individual Blackberry Lemon Trifle

Easter Dinner Menu

Floradora Cocktail

Blush pink in color and deliciously sweet-tart in flavor, the Floradora is the perfect gin cocktail for spring or summer. It’s a simple drink that uses just 4 ingredients, but the taste is showstopping!

Limoncello Spritz

The Limoncello Spritz is a bright, refreshing cocktail bursting with lemon flavor! It’s the perfect drink to sip poolside on warm summer days.

Slow Cooker Ham with Honey Marmalade Mustard Glaze

Learn how to make a slow cooker ham with this delicious recipe for Slow Cooker Ham with Honey Marmalade Mustard Glaze. The ham slow cooks during your busy day and comes out with great flavor thanks to the tasty glaze.

Potato Dinner Rolls

Fluffy Potato Dinner Rolls are scented with fresh rosemary and brushed with butter when pulled out of the oven. They pair well with your favorite holiday mains and are also great with soups, stews, and chilis!

Traeger Grilled Asparagus

The best way to grill asparagus? On a Traeger pellet grill, of course! Traeger Asparagus is ready in 15 minutes and is infused with smoky flavor from the wood pellets. If you don’t have a pellet grill, you can still make the asparagus on a traditional grill!

Roasted Honey Balsamic Carrots

This recipe for Honey Balsamic Carrots is a super simple way to make oven roasted carrots with lots of flavor! Keeping the carrots whole gives this side dish of whole roasted carrots a great presentation on the table!

Parmesan Scalloped Potatoes

Thinly sliced potatoes are simmered in a rich cream sauce before being layered with grated Parmesan cheese and baked. Parmesan Scalloped Potatoes are the perfect side dish for holiday gatherings and weeknight dinners alike!

Lemon Curd

The perfect balance of sweet and tart, homemade lemon curd is a creamy spread that’s easy to make on the stovetop or in the microwave.

Lemon Curd Pavlova with Raspberries

This Lemon Curd Pavlova is topped with fresh raspberries. You can make lots of mini pavlovas and serve them individually, or make one large pavlova as a dessert centerpiece.

Strawberry Fool

Strawberry Fool is an easy fruit dessert recipe made with whipped cream and fresh strawberries. It’s basically strawberries and cream taken up a notch! A simple, yet delicious, way to use ripe strawberries!

Your dinner sounds delicious! We usually have a baked ham, but since we had recently purchased a turkey breast for another occasion that fell through, we decided to utilize that, with yams, butternut squash, dressing, mashed potatoes, a light side salad, and key lime pie for dessert – I’m hungry already! Enjoy your holiday.
